Spiced Orzo and Veggie Salad

Here’s a yummy, light salad that’s great for lunch. This recipe is perfectly flexible, so don’t despair if you’re missing an ingredient or three. Just improvise! Add your favorite veggies – avocado, carrots, cilantro, and green onion would be delicious – or even mix in another protein, like tuna or shredded chicken.

Spiced Orzo and Veggie Salad

1 C orzo, uncooked

1 C broccoli florets

Quarter of a yellow bell pepper, diced

12 cherry tomatoes, halved

1.5 C black beans

1 C corn kernels

1/4 C Ranch dressing or sour cream

3 T lime juice

1 tsp chili powder

1/4 to 1/2 tsp red pepper flakes or ground red pepper

1 tsp chopped garlic

Salt and pepper, to taste

Cook orzo according to package instructions, adding broccoli to boiling water during last 4 minutes of cooking. Drain well and place in a large bowl. Add bell pepper, beans, tomatoes, and corn to bowl and toss.

In a separate bowl, combine the next 5 ingredients and whisk together. Drizzle over orzo mixture and toss to mix. Add salt and pepper to taste.
