Crockpot Cinnamon Apple Steel-cut Oats

Steel-cut oats rock my world. Well, at least to the extent a hot cereal can rock one’s world. They’re an absolute world apart from quick cooking oats, which can be gummy and lacking in the texture department.

With the mercury beginning to drop, I thought a steamy bowl of oats would be just the thing for a chilly morn’s breakfast, especially if there was no actual cooking required in the morning. So I whipped out my crockpot last night, tossed in my ingredients…..

…and woke up to the most delectable warm, cinnamony smells.

This recipe is hearty and not too sweet. Add any additional fruit you like during the cooking process, and top with milk and brown sugar if that floats your boat. Next time you have a crowd to feed, try doubling this for a super easy, healthy breakfast. At the very least, your house will smell divine!

Crockpot Cinnamon Apple Steel-cut Oats

1 C steel-cut oats

2 C almond milk (or dairy, soy, etc)

1 1/2 C water

1 C peeled, chopped apple

1 T cinnamon

1 1/2 T butter

2 T brown sugar

1/8 tsp salt

1 tsp vanilla

Coat crockpot interior with non-stick spray. Add all ingredients to crockpot and stir to combine. Cover and cook on low for 8 hours. Stir in more milk right before serving, if desired. Please note that you may have to adjust the cooking time depending on your crockpot and texture preference.
